The translucent wall is the working difference. Staff can check how much product is left without opening the tub, which in a busy freezer saves both the time of looking and the temperature lost every time a lid comes off. Across a shift that adds up to a lot of small openings that no longer have to happen.

Three gallons is a batch-production and freezer-holding size rather than anything a customer sees. Lids are not included, so plan closures separately if these are going to be stacked. A box of 10 is usually enough to keep several flavours in rotation while the machine works through the next batch.
